Rillettes de Tours
Rillettes de Tours are a classic French spread from the Loire Valley – aromatic, juicy and tender. Pork is slowly cooked in its own juices for hours until it falls apart and is processed with spices and a little white wine into a delicious, spicy-creamy confit. For the rillettes
- 600 g Pork shoulder
- 60 g Lard
- 100 Ml White wine dry, Loire
- 2 Garlic
- 1 Onion
- 2 Bay leaves
- 1 sprig of rosemary
- 0,5 tsp black peppercorns
- Salt
Confit meat
Cut the pork shoulder into pieces, rub with salt and let it sit for a while.
Cover in the roasting pan with lard, wine, onion, garlic and spices.
Cover and braise over low heat for 2.5-3 hours until the meat falls apart.
Remove the bones and herbs, finely pluck the meat, stir into the lard and jus, leave to cool.
