Sourdough crostini with aged goat cheese & kimchi

Crispy roasted sourdough bread crostini, topped with strong, matured goat's cheese and a spicy-sour kimchi, rounded off with chives and a little olive oil. The interplay of milky cream, fermented spiciness and bable structure offers perfect snack moments or a sophisticated appetizer - ideal with sparkling Pet-Nat White from Austria.

Ingredients
  

For the crostini

  • 1 small sourdough bread
  • 120 g aged goat cheese
  • 3 –4 tbsp kimchi Ready-made or homemade
  • 2 tbsp olive oil
  • 1 bunch of chives
  • Black pepper
  • Coarse sea salt

Preparation
 

Roasting crostini

  • Cut the sourdough bread into 1cm thick slices.
  • Brush with olive oil and roast in a preheated oven (220°C) for 6–8 mins. until golden brown.

Topping & Serving

  • Place the goat's cheese on top of the hot crostini, if necessary gratinate very briefly.
  • Pour kimchi over it.
  • Sprinkle with fresh chives, pepper and sea salt.
  • Drizzle with a little olive oil if desired and serve immediately.
