Carne cruda all'Albese is a Piedmontese raw classic made from finely chopped beef, seasoned with olive oil, lemon juice, salt, pepper and Parmesan cheese. Capers, egg yolk, anchovies or truffles round off the flavor. Fresh, tender and aromatic, this dish makes an elegant starter or an exclusive main course - inspired by the truffle region of Alba. The ideal accompaniment: a fruity Dolcetto d'Alba with elegant acidity.

  • 1 Sharp knife
  • 1 Cutting board
  • 1 Mixing bowl
  • 1 Lemon squeezer

Ingredients
  

For the meat

  • 250 g Very lean beef e.g. hip, fillet
  • 2 Tbsp mild olive oil
  • Juice of 1/2 lemon
  • Salt black pepper from the grinder

Set

  • 20 g Parmesan shavings
  • 1 Egg yolk optional
  • 1 Tbsp small capers
  • Truffle oil or fresh truffles by season

Preparation
 

Prepare & season the meat

  • Finely chop or scrape the beef and place in a bowl.
  • Carefully mix with lemon juice, olive oil, salt and pepper.

Serve & garnish

  • Serve the meat on chilled plates, garnish with Parmesan shavings, egg yolk, capers and truffles.
