For the meat
- 250 g Very lean beef e.g. hip, fillet
- 2 Tbsp mild olive oil
- Juice of 1/2 lemon
- Salt black pepper from the grinder

- 20 g Parmesan shavings
- 1 Egg yolk optional
- 1 Tbsp small capers
- Truffle oil or fresh truffles by season
Prepare & season the meat
Finely chop or scrape the beef and place in a bowl.
Carefully mix with lemon juice, olive oil, salt and pepper.
