Cooking utensils

  • 1 Pot for poaching the eggs
  • 1 Pan for the spinach
  • 1 Cutting board & knife

Ingredients
  

For the creamed spinach:

  • 300 g fresh baby spinach
  • 1 small shallot (finely chopped)
  • 1 Garlic clove (chopped)
  • 100 ml Cream
  • 1 TL Butter
  • Salt, pepper, nutmeg

For the poached egg:

  • 2 fresh eggs
  • 1 EL Vinegar
  • 1 Liter of water

For the topping:

  • 1 EL Pine nuts (roasted)
  • Some freshly grated Parmesan cheese

Preparation
 

  • Prepare the creamed spinach: Sauté the shallot & garlic in butter, add the spinach & allow to collapse. Refine with cream & season with nutmeg.
  • Toast the pine nuts: Toast lightly in a pan without oil.
  • Poach the eggs: Bring the water and vinegar to a simmer, slide the eggs in one at a time & leave for 3-4 minutes.
  • To serve: Plate up the creamed spinach, place the poached eggs on top & garnish with pine nuts & parmesan.
