Herb salad with radishes, feta & lemon dressing

A fresh herb salad with crunchy radishes, creamy feta and a light lemon dressing - perfect for spring days! It goes well with a Grüner Veltliner or a Sauvignon Blanc, both of which wonderfully emphasize the freshness of the dish.

Cooking utensils

  • 1 Cutting board & knife
  • 1 Large bowl for mixing the salad
  • 1 Small bowl for the dressing
  • 1 Whisk

Ingredients
  

For the salad:

  • 1 Handful of mixed herbs z. e.g. parsley, coriander, mint, dill, basil
  • 6 Radish cut into thin slices
  • 80 g Feta cheese cut into small cubes
  • 1 Handful of rocket or lamb's lettuce

For the lemon dressing:

  • 2 Tbsp olive oil extra virgin
  • 1 teaspoon lemon juice Freshly pressed
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt & pepper to taste

Preparation
 

Prepare the salad:

  • Finely chop the herbs, thinly slice the radishes and cut the feta into small cubes.
  • Place everything together with the rocket in a large bowl.

Prepare the dressing:

  • In a small bowl, mix the lemon juice, honey, Dijon mustard and olive oil well.
  • Season to taste with salt and pepper.

Dressing & serving:

  • Pour the dressing over the salad and mix carefully.
  • Garnish with additional herbs and some feta and serve immediately.

Recommended side dishes

  • Toasted baguette with herb butter
  • Grilled prawns as a light source of protein
  • A glass of chilled Grüner Veltliner or Sauvignon Blanc
