Linguine with sun-dried tomatoes, capers & anchovies
Mediterranean pasta with intense flavors: linguine meets salty anchovies, spicy capers and sun-dried tomatoes. The whole thing is gently sautéed in good olive oil and served with fresh parsley. A wonderfully aromatic pasta that is quick to prepare and brings a summery flair to the plate. Perfect served lukewarm - ideal for evenings with a glass of Nero d'Avola.

For the pasta:
- 180 g Linguine
- 8 Dried tomatoes in oil finely chopped
- 1 Tbsp capers rinsed
- 4 Anchovy fillets finely chopped
- 1 Garlic clove finely chopped
- 2 Tbsp olive oil
- Freshly ground pepper
- Parsley to garnish
Blend:
Add the cooked pasta to the pan and mix well. Add a little cooking water as required.
Season with pepper, garnish with parsley and serve.
