Linguine with sun-dried tomatoes, capers & anchovies

Mediterranean pasta with intense flavors: linguine meets salty anchovies, spicy capers and sun-dried tomatoes. The whole thing is gently sautéed in good olive oil and served with fresh parsley. A wonderfully aromatic pasta that is quick to prepare and brings a summery flair to the plate. Perfect served lukewarm - ideal for evenings with a glass of Nero d'Avola.

Cooking utensils

  • 1 Large pot for pasta
  • 1 Pan
  • 1 Cutting board & knife
  • 1 Cooking spoon

Ingredients
  

For the pasta:

  • 180 g Linguine
  • 8 Dried tomatoes in oil finely chopped
  • 1 Tbsp capers rinsed
  • 4 Anchovy fillets finely chopped
  • 1 Garlic clove finely chopped
  • 2 Tbsp olive oil
  • Freshly ground pepper
  • Parsley to garnish

Preparation
 

Cook pasta:

  • Cook the linguine in plenty of salted water until al dente, drain, reserving some of the cooking water.

Prepare the sauce:

  • Heat the olive oil in a pan and gently fry the garlic and anchovies.
  • Add the dried tomatoes and capers and fry briefly.

Blend:

  • Add the cooked pasta to the pan and mix well. Add a little cooking water as required.
  • Season with pepper, garnish with parsley and serve.

  • Grilled eggplants with balsamic vinegar
  • Fennel salad with orange fillets
  • Ciabatta with rosemary oil
