New Zealand salmon with avocado salsa

Grilled New Zealand salmon with a refreshing avocado salsa - a perfect combination of tender fish, fruity lime and creamy avocado. This recipe shows you how to prepare the salmon and which Sauvignon Blanc you should serve with it.

Cooking utensils

  • 1 Grill pan or grill
  • 1 Bowl for the salsa
  • 1 Cutting board & knife
  • 1 Tongs for turning the salmon

Ingredients
  

For the salmon:

  • 2 Salmon fillets (approx. 150 g each, preferably New Zealand salmon)
  • 1 EL Olive oil
  • 1 TL Lime juice
  • Salt & pepper to taste

For the avocado salsa:

  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1 Tomato, diced
  • 1 EL Coriander, chopped
  • 1 TL Olive oil
  • 1 TL Lime juice
  • Salt & pepper to taste

Preparation
 

Prepare the salmon:

  • Marinate the salmon with olive oil, lime juice, salt and pepper.
  • Preheat a grill pan or grill to medium-high heat.
  • Grill the salmon on the skin side for about 3-4 minutes, then carefully turn and cook for a further 2-3 minutes until it is still slightly translucent on the inside.

Prepare the avocado salsa:

  • Mix the avocado, onion, tomato and coriander in a bowl.
  • Season to taste with olive oil, lime juice, salt and pepper.

Serve:

  • Arrange the grilled salmon on a plate and top with the avocado salsa or serve separately.
