For the gnocchi:
- 400 g floury potatoes
- 100 g Flour
- 1 Egg
- Salt Nutmeg
For the sauce:
- 20 g Dried morels
- 1 Shallot
- 100 ml Cream
- 1 Tbsp butter
Prepare the gnocchi:
Boil the potatoes, peel and press through the ricer
Knead into dough with flour, egg and spices
Shape into rolls and cut into palm kitten shapes
Prepare the morel sauce:
Soak and finely chop the morels
Sauté the shallot in butter until translucent
Add the morels and deglaze with cream
Simmer for 10 minutes
