  • 1 Potato ricer
  • 1 Gnocchi roller
  • 1 Casserole
  • 1 Skimmer

Ingredients
  

For the gnocchi:

  • 400 g floury potatoes
  • 100 g Flour
  • 1 Egg
  • Salt Nutmeg

For the sauce:

  • 20 g Dried morels
  • 1 Shallot
  • 100 ml Cream
  • 1 Tbsp butter

Preparation
 

Prepare the gnocchi:

  • Boil the potatoes, peel and press through the ricer
  • Knead into dough with flour, egg and spices
  • Shape into rolls and cut into palm kitten shapes

Prepare the morel sauce:

  • Soak and finely chop the morels
  • Sauté the shallot in butter until translucent
  • Add the morels and deglaze with cream
  • Simmer for 10 minutes

Dressing:

  • Cook the gnocchi in boiling salted water
  • Serve with sauce

Recommended side dishes:

  • Fresh leaf salad with walnuts
  • Toasted bread cubes
  • Parmesan shavings
