Cooking utensils

  • 1 Cooking pot
  • 1 Chopping board and knife
  • 1 Blender or mixer
  • 1 Grater for lemon zest
  • 1 Soup ladles

Ingredients
  

For the soup:

  • 400 g Fresh or frozen peas
  • 1 small onion
  • 1 Garlic clove
  • 500 ml Vegetable broth
  • 1 Tbsp olive oil
  • Salt and pepper to taste

For the garnish:

  • 1 Handful of fresh mint leaves
  • Zest of one organic lemon
  • 2 Tbsp crème fraîche or plant-based alternative optional

Preparation
 

Prepare the soup:

  • Finely chop the onion and garlic.
  • Heat the olive oil in a pan and fry the onion until translucent. Add the garlic and sauté briefly.
  • Add the peas, pour in the vegetable stock and simmer for about 10 minutes until the peas are soft.
  • Put a few mint leaves to one side and add the rest to the soup.
  • Finely puree the soup with a hand blender or mixer and season to taste with salt and pepper.

Dressing:

  • Pour the soup into bowls or plates.
  • Garnish with the reserved mint leaves, lemon zest and a dollop of crème fraîche.
