For the soup:
- 400 g Fresh or frozen peas
- 1 small onion
- 1 Garlic clove
- 500 ml Vegetable broth
- 1 Tbsp olive oil
- Salt and pepper to taste
For the garnish:
- 1 Handful of fresh mint leaves
- Zest of one organic lemon
- 2 Tbsp crème fraîche or plant-based alternative optional
Prepare the soup:
Finely chop the onion and garlic.
Heat the olive oil in a pan and fry the onion until translucent. Add the garlic and sauté briefly.
Add the peas, pour in the vegetable stock and simmer for about 10 minutes until the peas are soft.
Put a few mint leaves to one side and add the rest to the soup.
Finely puree the soup with a hand blender or mixer and season to taste with salt and pepper.
Dressing:
Pour the soup into bowls or plates.
Garnish with the reserved mint leaves, lemon zest and a dollop of crème fraîche.
