Spring rolls "De Luxe" (fresh, not deep-fried) with avocado & mango

These fresh spring rolls, also known as bliss rolls, are the perfect choice for lovers of healthy and colorful Asian cuisine. In this recipe, we combine wafer-thin rice paper with creamy avocado, juicy mango and crunchy vegetables such as carrots and cucumber. The combination of fruity sweetness, butteriness and the ethereal freshness of mint and coriander creates a veritable firework of flavors. Together with an aromatic yellow muscatel or a Scheurebe, you will experience a pairing that impresses with its lightness and exoticism. Cooking utensils

  • 1 Large shallow bowl (for water)
  • 1 Cutting board
  • 1 Chef's knife
  • 1 Economy peeler

Ingredients
  

  • 8 Sheets of rice paper
  • 1 ripe avocado
  • 1 ripe mango
  • 1 Carrot
  • 1/2 Cucumber
  • 100 g Glass noodles prepared
  • 1 handful each of fresh mint and coriander
  • 2 tablespoon lime juice
  • 1 Tbsp roasted sesame seeds
  • For the dip: 3 tbsp soy sauce 1 tbsp peanut butter, 1 tsp honey, a little chili

Preparation
 

PREPARATION:

  • Cook the glass noodles according to the packet instructions and drain.
  • Peel the mango and cut into thin strips.
  • Halve the avocado, remove the stone and cut the flesh into wedges.
  • Immediately drizzle the avocado with lime juice.
  • Wash the carrot and cucumber and cut into very fine sticks (julienne).
  • Wash the herbs and pick off the leaves.

COOKING STEPS:

  • Pour lukewarm water into a shallow bowl.
  • Immerse a sheet of rice paper for about 10 to 15 seconds until it is soft.
  • Carefully place the wet paper on a damp cutting board.
  • Stack the ingredients in the bottom third of the paper.
  • First herbs, then avocado, mango, vegetables and glass noodles.
  • Do not use too much filling so that the paper does not tear.
  • Sprinkle the sesame seeds over the filling.

DIRECTIONS:

  • Fold the sides of the rice paper over the filling.
  • Roll up the paper tightly from the bottom.
  • Repeat the process for all rolls.
  • Arrange the rolls on a platter.
  • Mix the ingredients for the dip.
  • Serve the rolls halved or whole with the dip.
