The recipe
New Zealand salmon with avocado salsa
Cooking utensils
- 1 Grill pan or grill
- 1 Bowl for the salsa
- 1 Cutting board & knife
- 1 Tongs for turning the salmon
Ingredients
For the salmon:
- 2 Salmon fillets (approx. 150 g each, preferably New Zealand salmon)
- 1 EL Olive oil
- 1 TL Lime juice
- Salt & pepper to taste
For the avocado salsa:
- 1 ripe avocado, diced
- 1 small red onion, finely chopped
- 1 Tomato, diced
- 1 EL Coriander, chopped
- 1 TL Olive oil
- 1 TL Lime juice
- Salt & pepper to taste
Preparation
Prepare the salmon:
- Marinate the salmon with olive oil, lime juice, salt and pepper.
- Preheat a grill pan or grill to medium-high heat.
- Grill the salmon on the skin side for about 3-4 minutes, then carefully turn and cook for a further 2-3 minutes until it is still slightly translucent on the inside.
Prepare the avocado salsa:
- Mix the avocado, onion, tomato and coriander in a bowl.
- Season to taste with olive oil, lime juice, salt and pepper.
Serve:
- Arrange the grilled salmon on a plate and top with the avocado salsa or serve separately.
