Ingredients
  

For the baked Camembert

  • 1 large Camembert approx. 200g, in a wooden bowl
  • 1 sprig of rosemary
  • 1 sprig thyme
  • 1 Clove of garlic
  • 1 tbsp olive oil
  • Freshly ground pepper

For fermented mushrooms

  • 150 g small mushrooms or king oyster mushrooms
  • 1 Clove of garlic hacked
  • 250 Ml Water
  • 2 tsp sea salt
  • 1/2 tsp sugar
  • 2 tbsp white wine vinegar
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 2 Stalks parsley hacked

For the garnish

  • Fresh herbs e.g. parsley, chives, cress
  • Dark sourdough bread or baguette

Preparation
 

Fermenting mushrooms

  • Clean the mushrooms, cut in half, place in a clean jar with garlic, mustard seeds, pepper and salt.
  • Mix the water, vinegar and sugar, bring to the boil, allow to cool, pour over the mushrooms.
  • Close the jar, ferment at room temperature for at least 24 hours, then store in the refrigerator.

Baking Camembert

  • Preheat the oven to 200°C (top/bottom heat).
  • Unpack the Camembert, cut into the wooden bowl. Sprinkle with thin slices of garlic, rosemary and thyme, drizzle with olive oil, pepper.
  • Bake for 15-20 minutes until golden brown, until the core melts.

Wreak

  • Place the baked Camembert on a platter, garnish with the drained fermented mushrooms and herbs.
  • Serve with fresh bread and enjoy immediately.
