Herb salad with radishes, feta & lemon dressing
Cooking utensils
- 1 Cutting board & knife
- 1 Large bowl for mixing the salad
- 1 Small bowl for the dressing
- 1 Whisk
Ingredients
For the salad:
- 1 Handful of mixed herbs z. e.g. parsley, coriander, mint, dill, basil
- 6 Radish cut into thin slices
- 80 g Feta cheese cut into small cubes
- 1 Handful of rocket or lamb’s lettuce
For the lemon dressing:
- 2 Tbsp olive oil extra virgin
- 1 teaspoon lemon juice Freshly pressed
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt & pepper to taste
Preparation
Prepare the salad:
- Finely chop the herbs, thinly slice the radishes and cut the feta into small cubes.
- Place everything together with the rocket in a large bowl.

- In a small bowl, mix the lemon juice, honey, Dijon mustard and olive oil well.
- Season to taste with salt and pepper.
