Refreshing pea soup with mint & lemon zest
Cooking utensils
- 1 Cooking pot
- 1 Chopping board and knife
- 1 Blender or mixer
- 1 Grater for lemon zest
- 1 Soup ladles
Ingredients
For the soup:
- 400 g Fresh or frozen peas
- 1 small onion
- 1 Garlic clove
- 500 ml Vegetable broth
- 1 Tbsp olive oil
- Salt and pepper to taste
For the garnish:
- 1 Handful of fresh mint leaves
- Zest of one organic lemon
- 2 Tbsp crème fraîche or plant-based alternative optional
Preparation
Prepare the soup:
- Finely chop the onion and garlic.
- Heat the olive oil in a pan and fry the onion until translucent. Add the garlic and sauté briefly.
- Add the peas, pour in the vegetable stock and simmer for about 10 minutes until the peas are soft.
- Put a few mint leaves to one side and add the rest to the soup.
- Finely puree the soup with a hand blender or mixer and season to taste with salt and pepper.
Dressing:
- Pour the soup into bowls or plates.
- Garnish with the reserved mint leaves, lemon zest and a dollop of crème fraîche.
