  • 8 Sheets of rice paper
  • 1 ripe avocado
  • 1 ripe mango
  • 1 Carrot
  • 1/2 Cucumber
  • 100 g Glass noodles prepared
  • 1 handful each of fresh mint and coriander
  • 2 tablespoon lime juice
  • 1 Tbsp roasted sesame seeds
  • For the dip: 3 tbsp soy sauce 1 tbsp peanut butter, 1 tsp honey, a little chili

Preparation
 

PREPARATION:

  • Cook the glass noodles according to the packet instructions and drain.
  • Peel the mango and cut into thin strips.
  • Halve the avocado, remove the stone and cut the flesh into wedges.
  • Immediately drizzle the avocado with lime juice.
  • Wash the carrot and cucumber and cut into very fine sticks (julienne).
  • Wash the herbs and pick off the leaves.

COOKING STEPS:

  • Pour lukewarm water into a shallow bowl.
  • Immerse a sheet of rice paper for about 10 to 15 seconds until it is soft.
  • Carefully place the wet paper on a damp cutting board.
  • Stack the ingredients in the bottom third of the paper.
  • First herbs, then avocado, mango, vegetables and glass noodles.
  • Do not use too much filling so that the paper does not tear.
  • Sprinkle the sesame seeds over the filling.

DIRECTIONS:

  • Fold the sides of the rice paper over the filling.
